1/2 cup whole wheat flour
2 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1-1/2 cups fat-free milk
1/2 cup canned pumpkin
1 egg white, lightly beaten
2 tablespoons canola oil
Directions
In a large bowl, combine the first eight ingredients. In a small bowl, combine the milk, pumpkin, egg white and oil; stir into dry ingredients just until moistened.

3 Tbsp. sugar
1/2 cup vegetable shortening
1/2 cup soy milk
1/4 soft silken tofu
1 tsp. vanilla extract
1/2 cup semisweet chocolate chips
• Preheat the oven to 425°F. Grease a large baking sheet and set it aside.
• In a large bowl, combine the flour and sugar. Using a pastry blender or two forks, cut in the vegetable shortening until the mixture forms coarse crumbs.
• In a small bowl, whisk together the soy milk, tofu, and vanilla.
• Add the contents of the small bowl and the chocolate chips to the crumb mixture and blend with a fork until the mixture forms a soft dough.
• Place the dough onto a lightly floured surface and gently knead it 5 or 6 times.
• With a lightly floured rolling pin, roll the dough into a 7-inch circle. Cut it into 8 wedges and place them about an inch apart on the prepared baking sheet.
• Pierce the top of each with a fork. Bake for 18 to 20 minutes or until the scones are golden brown.
• Serve hot.Makes 8 scones

Buy either from the deli section of the grocery store, or buy from the meat counter.
cook the bacon in a cast iron skillet (spreads out the heat more evenly then metal skillets, and holds the heat better). Cook the bacon until it has cooked throughly, and as crispy as you like it.
Place on a plate with paper towels, to drain off the extra grease.Sausage (turkey, sausage, vegetarian)
Buy either from the deli section of the grocery store, or buy from the meat counter. There are three different kinds you will find at the store, choose which ever you prefer, the three kinds are pattie, bulk, and links.

heaping 1/2 t. salt
3 1/4 t. baking powder
1 t. sugar, if desired
1/2 t. baking soda
5 T. chilled shortening or lard
7/8 C. buttermilk
Sift the dry ingredients together into a large bowl. Add the cold shortening and work all through the flour with your fingertips until all the flour is combined with a bit of fat. Add the buttermilk and stir vigorously until the dough forms a ball.
Turn the dough out onto a floured surface. Flouring your hands if necessary, knead lightly for 10 strokes. Stop just as soon as dough begins to look smooth. (Sprinkle some additional flour on the dough if needed, but add as little as possible.)
Pat dough out into a rectangle, about 8 by 7 by 3/4 inches. Using a cutter dipped in flour, cut into 2-inch rounds. (Dough scraps can be pulled together and patted out again once.) Place on an ungreased baking sheet and bake in an oven preheated to 500°F. for about 8 minutes, until lightly browned. Serve hot.
Makes about 12 biscuits.
Gravy
1/2 pkg. mild sausage
2 tbsp. butter
2 tbsp. all purpose flour
5 cups whole milk
1 1/2 tsp. salt
1 1/2 tsp. pepperCook sausage until done. Add butter and flour. Simmer for a few minutes on medium heat stirring frequently. Add milk, salt and pepper. Simmer over medium-high heat stirring constantly until desired thickness.
