Navajo Stew

1 large onion, chopped
2 cloves garlic, finely chopped
3 Tbs. vegetable oil
2 lbs. beef stew meat, cubed
1/2 cup flour
2 cups chopped green chilies
1 red bell pepper, chopped
1 cup sliced carrots
2 cups fresh tomatoes, chopped, with juice
2 cups chicken broth
1 cup cooked hominy
1 1/2 tsp. salt
1/2 tsp. dried oregano
1 tsp. black pepperIn an ovenproof saucepan or stewpot saute onion with garlic in vegetable oil. Remove to separate dish with slotted spoon and set aside. Toss Beef cubes with flour and brown in oil. Return onion and garlic to stewpot with beef cubes. Add ingredients and simmer 1 1/2-2 hours.
