Hummus and Toasted Pita Bread

1 (19 ounce) can garbanzo beans, half the liquid reserved
4 tablespoons lemon juice
2 tablespoons tahini
1 clove garlic, chopped
1 teaspoon salt
black pepper to taste
2 tablespoons olive oil
In a blender, chop the garlic. Pour garbanzo beans into blender, reserving about a tablespoon for garnish. Place lemon juice, tahini, chopped garlic and salt in blender. Blend until creamy and well mixed.Transfer the mixture to a medium serving bowl. Sprinkle with pepper and pour olive oil over the top. Garnish with reserved garbanzo beans.
Toasted Pita Bread
Pita bread (any type)
olive oilPreheat oven to 400° F.
Brush both sides of the pita bread with olive oil. Cut the bread into quarters (to use as bread with a meal) or smaller wedges (to use with dips and spreads).
Place bread on cookie sheets and bake for 5-6 minutes. Turn bread over and bake for 3-5 minutes longer until a rich golden brown.
